If you are anything like me, and always have some leftover white wine from a party or any other occasion, just do your self a favor and make these AMAZING tea cakes! Just go and MAKE THEM! They are ”mind-blowingly” delicious and easy to make, and you can make them with any type of the filling that you want! Trust me, once you make them, you’ll want to make them again and again. That’s how good they are.

Even though they are called tea cakes, the texture is somewhere between cookies and (let’s say) pie-crust, with the sweet marmalade filling and soft coat of powdered sugar to top it all off. And every time I bite into one of these I get the feeling that I could throw a tea party, and that everyone would come just so they could eat them. I am definitely, 100% convinced, that I could pull it off, but only because of these amazing snowy white wine tea cakes.
You can use any filling that you want, I just love using jam or marmalade, because I always have them in my pantry. But I believe that dark chocolate would do WONDERS! I will most definitely try that version as well. And as I write this I get more and more ideas to try! That is how versatile this recipe is. Just please don’t over-bake them as they will become crumbly, and that is not what you want. Keep a good eye on them while they are in the oven because all the ovens are different. I bake mine for 15 minutes at 180°C (350°F), and I take them out as soon as they start to change color on the edges.

It Is Time For Tea Party!
Now it’s time to make these amazing tea cakes, and the party can start! Just make some Earl Gray Tea and enjoy these sinfully delicious treats with your friends and family! Trust me, everyone will ask for the recipe!

Yields 36 tea cakes
Soft white wine tea cakes, filled with jam, marmalade, chocolate or anything that you can image.

Ingredients
- 3½ cups of all-purpose flour + more if necessary
- 2 Tbsp sugar
- Pinch of salt
- 1 Tbsp baking powder
- ¾ cup white wine
- 1¼ cups of neutral vegetable oil
- 1 tsp vanilla extract
- Thick jam or marmalade
- Powdered sugar for dusting (Optional)
Directions
- In a big bowl combine all-purpose flour, sugar, salt, and baking powder. Roughly mix to combine.
- Mix together white wine, neutral oil, and vanilla extract, and add it to flour mixture.
- Knead with your hands until you get a dough ball that is not sticking to your hand.
- Cover with plastic wrap and put in the fridge to rest for at least 30 minutes.
- Preheat your oven to 180°C (350°F), and line baking sheet with parchment paper.
- Take the dough out of the fridge, and divide it into four (this will make it easier to handle and roll)
- Roll the dough to about ¼ of an inch thickness (6 mm), and using round 3-inch cookie cutter, cut the circles out of dough.
- Place approximately ½ tsp of jam/marmalade in center of each circle, fold it over and secure the edges using fork (as if you are making an empanada).
- Put your tea cakes on the lined baking sheet, and bake them in preheated oven for 15 minutes. Take them out as soon as you see them start changing color.
- Dust them with powdered sugar while they are still warm, and let them cool completely before serving.
