I am a big candyholic, as you might notice, and I always seek a new opportunity to make something sweet. This time I made these beautiful white chocolate Easter egg truffles, that will make the Easter bunny really jealous. They are rich in flavor and coated in coconut. That will make them the stars of this year’s Easter.

As a big fan of sweets and candy, I don’t like buying pre-made candies in stores. I’m actually one of those people who LOVES making the homemade versions of sweets because they are “healthier”. That means that I’ll use fresher ingredients with much fewer additives (if any!), and I can customize them any way I want. That imperfection actually makes them PERFECT in any way.
Also, when we speak about (im)perfections, these white chocolate Easter egg truffles will be perfect no matter how you make them. It’s all because of the egg-shape. If you would want to make them round, it would be a bit hard to do. But with the egg-shape, you are almost incapable of making a “mistake”. All you do is scoop some mixture, shape an oval egg, coat in coconut and that’s it!
The important thing about these white chocolate Easter egg truffles is that you make them of white chocolate ganache. It is firm enough to roll easily, yet still really smooth and soft when you bite into it. Trust me, you will enjoy it with every single bite.
You can also make Easter egg truffles out of dark chocolate ganache, and add a little bit of color variety. Here is the recipe for my French style dark chocolate truffles, that is also very easy to make.

Now, without further ado, here is the recipe for my white chocolate Easter egg truffles. Hope you like it as much as I do.
Anchy
Yields 16 truffles
Smooth and soft white chocolate truffles shaped into Easter eggs and coated with coconut flakes. Very quick and easy recipe to make.

Ingredients
- 200 g (7 oz) white chocolate
- 1/4 cup double cream
- 1 tsp vanilla extract
- coconut flakes, ground walnuts/almonds/hazelnuts for coating
Directions
- Pour double cream into saucepan and put over medium heat. Don't boil the cream, just heat it really well.
- Tear the white chocolate into chunks, then pour over hot cream, and let it sit for couple of minutes. Then stir everything together until you get smooth white chocolate ganache.
- Add vanilla extract and stir everything well.
- Let it sit in the fridge for at least one hour to set.
- Prepare your coatings, and then take roughly 1 teaspoon of ganache and roll it between your hands to form an egg shape. Coat it with your coconut flakes, ground nuts, or any other coating you wish. Repeat with the rest of the ganache.
- Allow your truffle eggs to set in the fridge for 15-20 minutes (or more) before serving. Enjoy!
