Vegan Energy Pancakes with Banana & Chia Seeds

Finally, it’s weekend (Hooray!). And is there a better way to start a day on a weekend than with the pancakes for breakfast? Especially if they’re made to give you an energy boost that you need. These vegan energy pancakes are so soft and fluffy, and you will not believe that they’re made without any eggs or milk.

I’ve been trying to figure out how to make a vegan version of pancakes. The reason for that is because I like to experiment with the ingredients, and trying to find some “new” ways to substitute one thing with something else.

I’ve got really used to making pancakes with eggs. That’s why it took me some time for researching and experimenting. And finally, I’ve got the perfect recipe.

There are several ways to substitute eggs in your recipes. In this case, I am using two egg substitutes. Banana will give the soft texture to our vegan energy pancakes and is also making this recipe sugar-free (Yes, sir!).

The other egg substitute, the ENERGY part, is the chia seeds. When combined with a liquid (in this case water), the chia seeds turn into gelatinous pudding. This is going to bind the batter like the egg does, so it’s not going to break while turning your pancakes.

Chia seeds are one of the most popular superfoods in the health community. They’re nutrient-dense seeds, originally grown in Mexico. Chia seeds are packed with energy-boosting power and Aztec warriors used them to give them high energy and endurance. Also, the word “chia” means “strength” in the Mayan language. I like my pancakes soft and fluffy, topped with some fresh fruits, or berry sauce. You can customize this recipe for vegan energy pancakes can in lots of different ways. You can make them with chocolate chips, or even cocoa powder. They are also great if you top them with maple syrup or even apple cider syrup. YUM! You will love these delicious and soft beauties.

Soft and fluffy vegan energy pancakes, made with banana and chia seeds.

Ingredients

  • 2 Tbsp chia seeds
  • 1/2 cup water
  • 1 big ripe banana
  • 1 tsp vanilla extract
  • 1 1/2 cups sparkling water
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • A pinch of sea salt
  • Coconut oil for frying

Directions

  1. Combine chia seeds and 1/2 cup of water in a small bowl, and let sit for 10 minutes.
  2. Mash banana in a big bowl, then add chia seeds, vanilla extract and sparkling water. Mix to combine.
  3. Add all-purpose flour, baking powder and salt to the bowl. Stir everything until just combined. Do not over mix, because you will end up with chewy pancakes, and you DON'T want that.
  4. Heat a non-stick pan over medium high heat with a little bit of coconut oil (just enough to cover the surface). I used 1/4 cup measurement for the pancake batter.
  5. Cook the pancakes for 2 minutes per side.
  6. Serve with your favorite pancake topping. I used my homemade blackberry sauce. Enjoy!
