Everyone is going to love these sweet glazed lime Parisienne carrots. You make them with a simple mixture of ghee, lime juice and apple cider syrup which make them a perfect sugar-free side dish to any roast dinner.
I just love these little round-shaped Parisienne carrots. They are a variety grown throughout Europe, originating from France. Unlike the baby carrots, these are grown as is, with long leafy tops. Their size is of a small radish, which makes them perfectly bite-sized. Also, their naturally sweet taste is something that kid love, so they will also love this veggie side dish.
Even though they are tough to find fresh in the supermarket, you can always try and look for them at the farmers’ market. But, you can also find them frozen at the bigger grocery stores.
These sweet glazed lime Parisienne carrots are going to become one of your favorite side dishes. The combination of ghee and apple cider syrup creates a beautiful sweet silky glaze, that will melt in your mouth. The sourness of the lime juice goes great with the sweet mixture, giving it contrast and that lovely lime aroma that we all love.
I love the rustic look of the washed and unpeeled carrots, with little green tips left on top. But if you want you can always scrub or peel your carrots, if you prefer.
This recipe is all done in one cast-iron skillet. First, you start everything on the stove-top and then transfer it to the hot oven to continue cooking until done. You will have to do everything fairly quickly, so be sure to prep all the ingredients and preheat the oven before you start cooking.

A delicious recipe for a roasted glazed carrots side dish that everyone will love.

Ingredients
- 1 kg Parisienne carrots, washed
- 1 Tbsp ghee or butter
- 4 big cloves of garlic, crushed with skins on
- 6 sprigs of fresh thyme
- 3 limes, zest and juice
- 2 Tbsp apple cider syrup
- A pinch of salt and ground black pepper
Directions
- Preheat your oven to 225°C (440°F) and put the cast-iron skillet on the stovetop to heat on high heat. You can also use other skillet or pan that is oven-safe.
- When the skillet is hot, melt ghee on it (or butter if you prefer). Crush the garlic cloves with the flat side of the knife and add to the hot skillet. They are here just to add flavor, so leave the skins on to prevent burning. Fry the garlic for a minute or so, turning it with a wooden spoon, to get that lovely garlic flavor to the ghee.
- Add the Parisienne carrots to the skillet. Fry for 3-4 minutes, stirring often, until carrots start to brown a little bit. Then add lime zest, juice of one lemon, and a pinch of salt and ground black pepper. Stir everything around to let the lime juice deglaze the skillet.
- Add the sprigs of fresh thyme, stir and place in the preheated oven for 20-25 minutes, or until the carrots are soft and cooked through.
- While the carrots are cooking in the oven, mix together apple cider syrup and the juice of two remaining limes. And when the carrots are almost done, take them out of the oven and add the lime-cider mixture, stir well to and place back in the hot oven for 1-2 minutes.
- When the carrots are done, they should be sweet, sticky and glazed. Let them cool down for a few minutes, then serve them as they are, or as a side dish to any type of meat. Enjoy!
