Roasted Italian sweet red pepper cold salad is a very simple and easy-to-make side dish. It is also very VERY delicious, and in my family everybody loves it. The smoky flavor of roasted red peppers, sourness of the balsamic vinegar and saltiness of the feta cheese are combined in this tasty dish, that I know you’ll enjoy!

In a previous post, I’ve shared a simple tutorial on how to make roasted sweet red peppers over an open flame in your home. So I’ve realized that it’s only logical now to share my favorite recipe calling for roasted red peppers. And that is this roasted Italian sweet red pepper cold salad.
This salad is one of my favorites because of a couple of things.
First, it is so simple to make and goes well as a side to any type of meat, especially grilled chicken or steak. Those two smoky flavors are just perfect together. You should really try it out 😉

Second, you can make roasted sweet red peppers in batches and freeze them unpeeled. That way the blackened skin will protect peppers from frost-burn, and they will keep that smoky aroma. Just portion them in the zip-lock bags, write the dates so you know when you’ve frozen them, and place in your freezer. This way you can have this or any other roasted Italian sweet red pepper recipe all year round.
They can be frozen up to a year. When you’re ready to eat, just thaw them in room temperature or in your fridge. Then peel off the skin and season with simple balsamic dressing, and that’s it!

And third (and most important) thing, this salad JUST TASTES SOOO GOOD!
That smoky flavor of red peppers goes really nice with the saltiness of feta cheese and sour taste of balsamic vinegar. Everything is complimented with the freshness of parsley. That’s why I really love this roasted Italian sweet red pepper cold salad.

You might be wondering why I call it a “cold” salad since almost all salads are cold, right? Well, this one is special because you can make it in advance and keep in the fridge for up to 4 or 5 days. The more it’s refrigerated the better it tastes. Only make sure to add feta cheese just before serving, since it can change the texture and flavor if kept combined with balsamic vinegar dressing.

Ingredients
- 8 roasted red peppers, skin peeled, stalks on
- ½ cup flat leaf parsley, chopped
- ½ cup feta cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Pinch of salt
- Pinch of pepper
Directions
- Put roasted peppers in a bowl.
- In a small bowl combine olive oil, balsamic vinegar, salt and black pepper. Mix until salt is dissolved and pour over roasted red peppers.
- Mix the peppers with your hands, until coated with dressing.
- Add chopped parsley and mix once again.
- Serve on a plate, topped with crumbled feta cheese on top. Enjoy!
