Here is another chia seed pudding idea, that I know you’re going to like. Since lots of you loved my “Bana-Colada” chia pudding I posted a few weeks ago, I’ve decided to share another one of my favorite combinations. This time it is raw cacao banana chia pudding, that is also made with coconut milk.
Since I’ve done my Whole30 journey a few months ago, chia seed pudding has become the staple in my fridge. I make it at least once a week (if not more). And I always make it in bulk, so it lasts me for at least 3 or 4 days.
I don’t mind eating the same breakfast for a few days in a row. In fact, I really love having everything ready for eating in the fridge. That way I know that we will have a healthy breakfast before we go to our day jobs, and not grabbing some junk food on the way to work.
To make this delicious raw cacao banana chia pudding, all you need to do is mix the chia seeds and coconut milk together with raw cacao powder. Leave everything in the fridge overnight, and mix in the mashed banana in the morning. I believe that the banana is adding enough sweetness. But if you want, you can add any sweetener of your choice. Agave or Maple syrup are very delicious choices.

Ingredients
- ½ cup chia seeds
- 1 can coconut milk
- ½ cup coconut water (or regular water)
- 3 Tbsp raw cacao powder
- 2 ripe bananas
- Sweetener (optional)
Directions
- In an airtight container whisk together coconut milk and coconut water, until well combined.
- Add chia seeds and raw cacao powder and mix well.
- Leave on the countertop for 5 minutes. Mix again and then place in the fridge overnight, or up to 4 days.
- When you’re ready to eat, mash bananas and mix in the chia pudding.
- Serve topped with fresh fruit of your choice. Enjoy!
