This recipe for pumpkin turmeric soup is probably the quickest and most simple recipe you could ever imagine. It calls for the most simple ingredients that you probably already have in your pantry. And all you need to do is throw everything in the pot, boil it, blend it, and serve. It’s just that easy.
In one of my recent posts, I’ve shared a simple step by step tutorial on how to roast any kind of pumpkin. In that post, I particularly talked about roasting butternut and red kuri squash, but you can easily convert it to any other pumpkin you have on hand.
When roasted, pumpkins become really soft and can be blended into pumpkin puree that we all LOVE oh-so-much! And when you make it, you can keep it in the fridge for up to a week, or freeze it for later use.
In this particular recipe, my quick pumpkin turmeric soup, I’ve used roasted red kuri squash. The main reason for this is because it has less fibery texture than butternut, so the soup is really creamy and smooth. It also has a lovely nutty flavor that will make you ask for another bowl, for sure…
Have the leftovers? Don’t be alarmed, this soup tastes even better the day after! Just reheat it and serve, or bring with you to have tasty lunch at work.
How to make Pumpkin Turmeric Soup
To make this quick pumpkin soup recipe, all you need is some basic ingredients that you probably already have in your pantry/fridge. You need is onion, garlic, roasted red kuri squash (or pumpkin puree), coconut milk, veggie stock, and some turmeric + salt and black pepper.
Caramelize the onion and garlic, and then add your pumpkin, turmeric, coconut milk, and stock. Bring everything to boil, simmer for few minutes and then season to taste. Blend everything with an immersion blender, or any other blender you have on hand and serve. I like adding a dollop of coconut cream and toasted pumpkin seeds on top, but it is also delicious with some homemade croutons.
