One-Bowl One-Fork Chocolate Chip Banana Bread

Here is another delicious recipe to use up all of the ripe bananas (please don’t throw them away). One-bowl one-fork chocolate chip banana bread is as delicious and as indulgent as it sounds and is also really easy to make. This is going to be your go-to and the only banana bread recipe you’ll ever need.

I came up with this simple recipe while I was pregnant with Eleonora (my daughter). I really needed something chocolaty yet not packed with sugar, and had some overly ripe bananas sitting on the counter. 

Also, I really didn’t want to do many dishes, so that’s how this recipe got its’ name – one-bowl one-fork chocolate chip banana bread 😀

Why did I use a fork and not a wooden spoon for mixing? Simply because I used a fork for mashing bananas, and didn’t want another utensil dirty. Is there another pregnant woman who can relate? 🙂

My favorite way to eat banana bread is toasted and served with a knob of butter or dollop of creme fraiche. Y-U-M!!!

Really simple recipe for chocolate chip banana bread that you'll make whit only one bowl and one fork

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • 1/3 cup light olive oil (or other neutral flavored vegetable oil)* (see notes)
  • 1/4 cup sugar (bananas are very sweet when ripe)
  • 1 tsp baking powder
  • Pinch of sea salt
  • 2 cups all-purpose flour
  • 3/4 cup chopped dark chocolate (or chocolate chips)

Directions

  1. Preheat your oven to 200°C (400 F). Butter the loaf pan and coat it with flour to make it non-stick, or line it with parchment paper.
  2. Mash bananas with a fork. Add eggs and mix until eggs are beaten.
  3. Add oil, sugar, baking powder and salt, and mix well.
  4. Add flour and mix until just combined.
  5. Fold in the chopped chocolate.
  6. Pour the batter into the prepared loaf pan and place in the preheated oven. Reduce the heat to 180°C (350 F) and bake for 45 to 50 minutes, or until golden on top and toothpick inserted in the middle comes out clean.
  7. Leave to cool in the loaf pan for 15 minutes, then you can serve it warm or let cool completely on the cooling rack.
  8. Enjoy!

Notes

* I wouldn't use extra virgin olive oil since it has really strong flavor. You can use some nut oils if you enjoy their flavor, but I would always recommend neutral flavored vegetable oils like sunflower or canola oil. * You can use melted butter as well, but that is more dirty dishes for you 🙂 **My favorite way to eat banana bread is toasted and served with butter or creme fraiche.
