We all know that kale is good for us and that we should be eating it more often. And to be honest, I don’t like (over)cooked kale, only the fresh one. We often tend to overcook it, so it becomes bitter. So, I am going to share with you one very simple and delicious salad recipe that everyone will love and enjoy. It is Autumn, and we have a great variety of different veggies in season. But I have decided to use not so popular one –> Kale – the king of all vegetables. I am making my favorite massaged kale salad that is refreshing and Oh-So delicious.

I’ve been used to avoid putting fresh kale in my salads because it can be rough and chewy. But then I learned about massaged kale salad. OMG, I just couldn’t believe how soft and delicious the kale was.
I know it sounds a bit ridiculous that you need to massage your veggies. But trust me, you will be surprised how this tough green leaf transforms into a soft and tender salad. While you rub the kale with olive oil, the leaves darken a bit and shrink in size, while the texture becomes soft and delightful.

This is my favorite recipe for massaged kale salad – with cucumber and fresh mint. The fresh mint makes this kale salad very tasty and refreshing. Also, fresh mint is a good friend with cucumbers as well, so in this salad, it makes a great connection between kale and cucumbers.
Maybe you are not used to adding fresh herbs to salads, but believe me that adding simple herbs like fresh mint, basil or parsley can bring all of your salads to the next level. Just give it a try.
This kale salad is one of those that you can make on Sunday during your meal prep session, and keep it in a fridge for a few days, and have it throughout the week. I would just recommend adding your cucumber right before serving because you don’t want it to become soggy and make your salad watery.
