In this post I am going to share with you not one, but two very simple and delicious salad recipes that everyone will love and enjoy, and since it is Autumn and we have a great variety of different veggies in season, I have decided to put in use a few of them, mostly Kale – the king of all vegetables. If you are interested in what you have just read, then keep on reading, because trust me, when you make one of these salads, you will keep on making it over and over again. Yes, that is how good they are! ­čÖé┬á

And then I asked myself why would we limit ourselves to just one recipe with fresh kale, when we can have more? That is the reason why I decided to share with you these two kale salads, to sneak into your repertoire. Trust me, your friends and family will love you for making one of these for them.

Why is Fresh Kale good for you?

As I said before, kale is definitely a king of veggies because it is packed with vitamins (A, K, C, B6, etc.) and minerals (Manganese, Magnesium, Potassium, Calcium, etc.), and also contains antioxidants and can help you lower cholesterol.

Kale is great source of fiber as well, and you can use in all sorts of different recipes, but I like to add ti to salads because it gives that extra texture that most salads are lacking.

Kale Slaw Salad – Light and Refreshing Kale Salad

I know that you are probably think ”how can slaw be light?”. Well there is a way to make it lighter than it usually is. All you need to do is to replace mayonnaise with Greek yogurt. And if you want it even lighter (yes it can been done!) feel free to use fat free yogurt. Substituting mayo with yogurt will keep your kale salad creamy, as it should be, but you will get rid off all of that excess oil that we can find in mayo. Just make sure that you are using Greek style yogurt because it is much thicker, and wee don’t need that extra liquid to make our kale salad soggy.

To shred cabbage and chop kale, I would recommend you to always use sharp chef’s knife, because that way you can have the best control over your knife and prevent cutting yourself.

Ingredients:

  • 1 small cabbage
  • 2 cups kale leaves, stemmed
  • 2 medium carrots
  • 1/2 cup Greek yogurt
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 Tbsp red wine vinegar
  • 1 Tbsp extra virgin olive oil
  • Salt and black pepper

Directions:

  1. Shred cabbage as finely as you can, finely chop kale leaves and grate carrots. Put everything in big bowl.
  2. In a separate bowl make dressing by mixing together yogurt, lemon juice and zest, red wine vinegar, olive oil, salt and black pepper.
  3. Pour your dressing over the salad and mix until everything is well covered.
  4. Cover with cling film (plastic wrap) and put in the fridge for at least 2 hours.
  5. Serve with steak and burgers and enjoy.
  6. Can be kept in a fridge, covered with plastic wrap, for up to 5 days.

Refreshing Kale Salad with Cucumber and Mint

Yes, you’ve read that right. We are going to use fresh mint in this recipe, and it is going to make this kale salad very tasty and refreshing. Also, fresh mint is a good friend with cucumbers as well, so in this salad it makes a great connection between kale and cucumbers.

Maybe you are not used to adding fresh herbs to salads, but believe me that adding simple herbs like fresh mint, basil or parsley can bring all of your salads to another level, if you give it a try.

This kale salad is one of those that you can make on Sunday during your meal prep session, and keep it in a fridge for a few days, and have it throughout the week. I would just recommend to add your cucumber before serving, because you don’t want it to become soggy and make your tasty kale salad watery.

Ingredients:

  • 4 cups kale leaves, stemmed
  • 1 cup cucumber, chopped
  • 1/2 cup fresh mint leaves
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • Salt and black pepper, to taste

Directions:

  1. Finely chop kale leaves and cucumbers, and put into a big bowl.
  2. Make dressing by mixing finely chopped mint leaves, olive oil, lemon juice, salt and black pepper, and pour over the salad.
  3. Mix everything using your hands, and massage dressing into the kale leaves.
  4. Serve straight away, or keep your salad in a fridge for up 4 days. If you are going to keep it in a fridge I would recommend not to add cucumbers until you are ready to serve the salad, because they tend to make salad watery.
