Homemade Mayonnaise – Make it anyway you want!

Immersion blender is a life-saving gadget – I use it to cream soups, blend cooked fruits into juice, and to make the most wonderful mayonnaise. It is so convenient, and most importantly, it is very easy to clean – all you need to do is to wash the blade, that on most immersion blenders is detachable off the stick part.

Now you are probably wondering why would anyone bother to make mayonnaise, when that includes mixing and cleanup? My answer is simple – because it is way more delicious, and you can customize the thickness and the flavor by using different oils and spices. The best part is that you know what it is made of. It is so versatile and I really love using it in my salad dressings, on sandwiches and burgers, or even for making all sorts of dips. Sometimes I even find myself putting it all over everything that I eat – chicken, roasted veggies, steak. It is THAT GOOD!

How easy is to make mayonnaise?

To make your own mayonnaise you don’t need much, and the chances are that you probably already have all the ingredients in your fridge and pantry. All you need is an egg, lemon juice (you can even use vinegar if you like it more acidic), any kind of mustard you like, salt, black pepper and some neutral vegetable oil. You can actually use any kind of oil that you want, but some oils like olive or sesame oil can bring a distinct range of flavors, which some people don’t like. Put all your ingredients in a tall jar and mix with the AMAZINGĀ immersion blender for 20-30 seconds. And THAT’S IT!

Most recipes for homemade mayo call for English mustard (if you like a little bit of heat) or for Dijon mustard. I personally prefer using grainy mustard when making my own mayonnaise. I like those little bursts of mustard flavor that you get when you run into mustard grains. Also, I love trying new mayo flavors by adding spices like curry powder, turmeric (which also gives wonderful yellow color) or chilies, or even adding roasted garlic. OMG, the options are endless.

Ingredients:

  • 1 whole egg
  • 2 Tbsp lemon juice
  • 1 tsp grainy mustard (or English mustard if you prefer)
  • pinch of salt
  • pinch of black pepper
  • 1 cup neutral vegetable oil

Directions:

  1. Put egg, lemon juice, grainy mustard, salt and black pepper in a jar.
  2. Add neutral vegetable oil over other ingredients.
  3. Submerge immersion blender all the way to the bottom of the jar and that is when you start it running.
  4. Slowly start to move the immersion blender up and down to get the wanted consistency. When you get all the way to the top, after about 20-30 seconds, your mayonnaise is DONE.
  5. Use it whichever way you like, in your favorite sauces, salads or on you sandwiches and burgers. Enjoy!
