Sometimes, I feel blessed for having my own little backyard garden ♡. That small portion of land that gives me all sorts of organic veggies that I like. During the winter, my Mom and I use the greenhouse to grow lettuces, spinach, chard, and lots of other spring leafy greens. And since it’s the middle of the spring, it’s time to use up as much fresh lettuces and spinach as possible. But also, preserve the rest (I have a thing or two against throwing away the food). So here is a recipe for simple and delicious green lettuce salad with apple, brown rice and walnuts. It is great as a side dish or as a bring-to-work lunch.

For me, green lettuce salad is one of the favorites. The lettuce leaves have a lovely tartness that goes well with all types of dressings. You can also use those delicate leaves for lettuce wraps and in sandwiches, to add a little bit of freshness.
This green lettuce salad is really light, and as a side dish will complement any type of roasted or grilled meat. You can also bring it to work as a lunch because it is a lovely filling meal on its own. The freshness of the green lettuce and sweetness of an apple are perfect in contrast to the crunch of walnuts. The nutty flavor of cooked brown rice brings it all together. I know you’re going to like it a lot.
