I am AMAZED by any meal that can be entirely prepared in one pan/pot. When you think about it, it is a pretty genius idea – you make main and side dish, all in one pan, and you don’t have to dirty up any other bakeware or pan. That is why I think that this recipe for chicken thighs and rice with ginger and turmeric is ideal for busy days and lazy weeknights (guilty on both charges!).

I will try not to get off-topic much, but here is one study that I really want to share with you all. This relatively new study is about the effects that curcumin (found in turmeric) has on us humans. The findings are very interesting.

Turmeric is one of my favorite spices, and I like to add it to almost everything, and this recipe is one of those. This dish is packed with flavor, it calls only for a few simple ingredients, it is made in one pan and it’s done in about 30 minutes start to finish. What more can you seek out of the dish?
