I am AMAZED by any meal that can be entirely prepared in one pan/pot. When you think about it, it is a pretty genius idea – you make main and side dish, all in one pan, and you don’t have to dirty up any other bakeware or pan. That is why I think that this recipe for chicken thighs and rice with ginger and turmeric is ideal for busy days and lazy weeknights (guilty on both charges!).

Turmeric is one of my favorite spices, and I like to add it to almost everything, and this recipe is one of those. This dish is packed with flavor, it calls only for few simple ingredients, it is made in one pan and it’s done in about 30 minutes start to finish. What more can you seek out of the dish?

One Skillet Ginger & Turmeric Chicken Thighs and Rice


Ingredients:

  • 6 chicken thighs (bone in, skin on)
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • Pinch of ground black pepper
  • ½ tsp sea salt
  • 2 Tbsp olive oil
  • 1 medium onion, finely diced
  • 1 clove of garlic, finely chopped
  • 1 cup long-grain white rice (Basmati, Jasmine, or whichever you prefer)
  • 1½ cup water or chicken stock
  • Chopped parsley or cilantro for garnishing (optional)

Directions:

  1. Preheat your oven to 200°C (400°F). If you are using a skillet that has a lid, you won’t need the oven at all.
  2. Put chicken thighs in the ziplock bag and add all the spices. Toss everything around until chicken thighs are completely covered.
  3. Heat the skillet over medium-high heat and add the oil. Fry chicken thighs (first skin side down) for 4-5 minutes on each side, until golden, and then remove from skillet and set aside.
  4. In the same oil (that is now flavored with spices) cook finely diced onion and garlic for 2 minutes, until onion becomes translucent. Then add rice and fry for 30 seconds or so before adding water/chicken stock.
  5. When water comes to boil return the chicken thighs (skin side up), transfer everything to the preheated oven (or cover with the lid) and cook until all the water is absorbed by the rice, and chicken thighs are tender and cooked through. That can take around 10-15 minutes.
  6. Serve immediately garnished with chopped parsley or cilantro. Enjoy!
