I don’t know about you, but I’m always trying to make some new quick recipes for breakfast. They are perfect for the busy mornings when all you want is to get ready and get out the door. This recipe for the fresh tomato and collard omelette warp is just perfect for those types of mornings.
Most of us don’t have the time or energy to get up every day earlier in the morning just to spend it on preparing and cooking the breakfast. Trust me, I’m just like that too! I truly believe that breakfast is the MOST IMPORTANT MEAL of the day, and I never skip it. But sometimes, I just don’t want don’t have time to make a big breakfast for Vesely and me. That’s why I always like to give a try for something new so that I’m always prepared for “those” mornings.
I came up with this simple and fresh tomato and collard omelette wrap just recently, when the two of us were on the Whole30 challenge. Only then we weren’t using the whole-wheat tortilla wraps. Instead, I used only the lovely fresh collard leaves to wrap our omelettes. It was really an amazing quick breakfast wrap! The crunchiness of the collard works great with fresh tomato slices and soft omelette, and everything combined gives you the burst of flavors that you will NEVER FORGET!

Quick and easy breakfast idea, that you can have on-the-go!

Ingredients
- 2 eggs
- ½ tsp ghee
- Pinch of salt and black pepper
- 1 whole-wheat wrap/tortilla
- 2 collard leaves, stems removed
- 1 tomato, sliced
- Fresh basil leaves
Directions
- Heat ghee in the frying pan, over medium heat.
- Beat the eggs in a bowl and season with a pinch of salt and ground black pepper. Fry the eggs in the heated pan. Try not to scramble them a lot. Instead fry the eggs in a omelette style.
- When the eggs are done to your liking, take the whole-wheat wrap and lay it flat on the countertop. Place the collard leaves on the wrap, then the omelette followed with the tomato slices and fresh basil leaves.
- Wrap everything tight. Enjoy!
