These grilled chicken dinner sandwiches are amazingly quick and easy to make. They are the ultimate fast food, but most importantly, they are versatile so that you can flavor them any way you like. You can use different condiments or salad greens, or even use different spices on chicken directly. It would be as if you took all of your family to the restaurant for dinner!
I always loved grilled chicken breasts, especially when we are making them on a barbecue. They become tender while cooking, and the smoke gives them perfect BBQ aroma.
But, as you may know, chicken breasts tend to dry out really fast while cooking. This basic recipe will help you get them tender and perfectly cooked at the same time. When you master it, you will be confident in trying new flavor combos, and your family will love it!
How to perfectly grill chicken breasts
Cooking chicken to be tender and cooked through is the key point in this recipe. It is a bit difficult to cook chicken breasts in one piece, so I always recommend slicing them into three thinner pieces.
Here’s what to do. Place boneless, skinless chicken breast on a cutting board. First, you need to remove the tenderloin by cutting the tendon which connects it with the breast. Sometimes, you will find the tenderloin to be already removed, but it usually comes attached to the chicken breast. It is a very tender and sweet piece of white meat.
Now put the breast on cutting board facing down. Put the palm of your hand on top to hold it flat, and slowly run the knife horizontally through the middle, to get two evenly thick pieces. It helps if you do this on the edge of your cutting board so that the knife can go parallel to the board.
Now you have three pieces out of each breast, ready for seasoning and grilling.
This recipe is perfectly suitable for making on a barbecue grill or a grill pan. If you are making it in a grill pan, just wanted to let you know it will smoke (just like real bbq) so make sure you are using some kind of cover, or have a well-ventilated kitchen. Another tip for reducing the smoke – DON’T add any more oil to the pan because it is only going to smoke more. The olive oil coating is enough for grilling and cooking chicken to perfection.
When done, the chicken should be cooked through in the thickest part. That means it’s no longer pink and it reached a temperature of 73°C (165°F). You can measure that using the instant-read thermometer or by cutting into chicken breast to see the color.
