Every time I pass by some fast food stand I start drooling over the smell of French fries. But actually, that isn’t just the smell of potatoes. That is mostly the smell of deep frying oil that was heated and reheated many times. And that is something that I remind myself every time I even consider taking just the smallest portion of deep-fried French fries.
That is why I needed to find the recipe for quick and easy baked potato fries. I needed them to be crispy on the outside and soft and fluffy on the inside. And I have finally found the right method to make them.
Now I can enjoy my healthy version of potato fries every time I want. Guilt-free! YASSS!
There actually isn’t any special secret for making baked potato fries oh-so-delicious. All you need to do is tap them dry off any excess liquid, drizzle with just a teeny tiny bit of olive oil and season them to your liking. Then, lay them in ONE SINGLE LAYER on the baking sheet, and bake them for 30-40 minutes! And that is it! That is all you need for making the most indulging baked potato fries in the world.

Ingredients
- 1 kg (2 lb) potatoes
- 2 Tbsp olive oil
- 1 tsp sea salt
- ½ tsp ground black pepper
- 1 ½ tsp dried oregano
Directions
- Preheat the oven to 220°C (425°F) and line your baking tray with parchment paper.
- Peel the potatoes (or leave the skins if you prefer) and cut them into wedges about 1.5 cm (0.5”) thick. Tap them dry. In order to get crispy fries, and prevent them from getting soggy, the potatoes need to be dried from any excess liquid.
- Put the potatoes in the bowl and add the olive oil, sea salt, ground black pepper, and dried oregano. Mix everything around until potato wedges are coated with oil and seasoning.
- Transfer onto the prepared baking tray and lay the potatoes in single layer.
- Bake in the preheated oven for 30-40 minutes, or until the potatoes are baked through. They should be golden and crispy on the outside and soft on the inside.
- Serve immediately. Enjoy!
Notes
Don’t leave them on the tray, because they will soften completely and lose crispiness.
If you like your potato fries thinner, you need to adjust the baking time. If cut smaller you will need less time.
