Sheet pan recipes are THE BEST for those busy weekdays when you just don’t know what to make for dinner. This recipe for chicken thighs with broccoli and potatoes sheet pan is just an example of what to cook when you don’t have time for complicated cooking.
To be honest with you, I can hardly call this a recipe. I just wanted to share some ideas for a quick and easy dinner recipe that you can just toss in the oven, and take it out when it’s done 🙂
It’s as easy as that.
Another great thing about this sheet pan recipe is that it calls for frozen broccoli florets. Yes, you’ve read that right!
I find that frozen broccoli florets are much cheaper than fresh. Also, you don’t have to worry about them going bad in the fridge and losing the nutritional value. And on top of it all, it is already cut and prepped for you, so you don’t need to do anything special.
What can I say more than – I LOVE FROZEN VEGGIES! I really do!
To make this recipe, all you need is chicken thighs, broccoli, and potatoes. I also like adding a carrot, and some other veggies that I have on hand.
You just cut the veggies (except the broccoli which is already cut 😉 ) sprinkle them with some olive oil and seasoning. Do the same with chicken, and put everything on the sheet pan and cook in the oven.
That’s like less than 5 minutes.
And, you can also add some cooked rice to stretch this recipe for more people, add more or less chicken thighs, add other veggies if you want. Customize it to your liking and it will turn out GREAT and TASTY every time. I promise!
