I am AMAZED by any meal that can be entirely prepared in one pan/pot. When you think about it, it is a pretty genius idea – you make main and side dish, all in one pan, and you don’t have to dirty up any other bakeware or pan. That is why I think that this recipe for chicken thighs and rice with ginger and turmeric is ideal for busy days and lazy weeknights (guilty on both charges!).

I will try not to get off-topic much, but here is one study that I really want to share with you all. This relatively new study is about the effects that curcumin (found in turmeric) has on us humans. The findings are very interesting.
