The Spring is finally here! And I don’t know about you, but for me, that means lots more time spent outdoors with friends and family. Most of the times we spend time around BBQ, so I came up with the recipe for this amazing salad. Cabbage kale slaw is refreshing and really light and goes great with burgers or any other BBQ/Grill type of meat you like.

Coleslaw is probably one of the basic sides that is served at pretty much every BBQ party. It is cold and refreshing and goes great with burgers and steaks. It is great for cooling your palate if you like your burgers with some hot sauce. Also, it is probably the healthiest thing most of the people will eat at the BBQ parties. So, that is the reason why I’m sharing this recipe for cabbage kale slaw.
I’ve never liked kale, especially when it’s cooked. But then I started using it in my smoothies and salads, and I fell in love with it. I know that fresh kale is really rough and can have a bitter and iron-like taste. But, when you dress it properly you create a heavenly tasting dish, that everybody loves.
Why is Fresh Kale good for you?
Kale is definitely a king of veggies because it is packed with vitamins (A, K, C, B6, etc.) and minerals (Manganese, Magnesium, Potassium, Calcium, etc.), and also contains antioxidants and can help you lower cholesterol.
Kale is a great source of fiber as well, and you can use in all sorts of different recipes, but I like to add it to salads because it gives that extra texture that most salads are lacking.

This cabbage kale slaw is very light and refreshing
I know that you probably think ”how can a slaw be light?”. Well, there is a way to make it lighter than it usually is. All you need to do is to replace mayonnaise with Greek yogurt. And if you want it even lighter feel free to use fat-free yogurt. Substituting mayo with yogurt will keep your cabbage kale slaw creamy, as it should be, but you will get rid off the excess oil that we can find in mayo. Just make sure that you are using Greek-style yogurt because it is much thicker, and we don’t need that extra liquid to make our slaw soggy.
It would also be the best if you used the homemade Greek yogurt, which happens to be really easy to make. Here is my recipe for creamy homemade Greek yogurt.
Also, if you prefer your cabbage kale slaw to be made with mayo, I would recommend you make your own mayo. That way you can control all the ingredients that go inside, and you can customize it to your liking. Here is the recipe for my 30-seconds homemade mayo.
