Well, here is a recipe for my buckwheat flour crepes. They are a gluten-free and very nutritious alternative to crepes made with any refined flours. And you can enjoy them with any type of crepe filling you can imagine! You will love these!

I’ve loved crepes ever since I can remember. My mom told me a story about when my brother and I were toddlers. Our grandma lived in the same house as we did, but she was one story under. The two of us would grab our jammies and just say “we are going to sleep at grandma’s” and just go downstairs. After about an hour we would come back home. And repeat the same scene a few times a day.
My mom was very curious what was going on, so one time she followed us. Then she realized that every time we showed up at grandma’s door, she would just put the frying pan on the stove to make us crepes (“palačinke” how we call them in Bosnia). When we finished eating, we went home. And do it all over again 😀
Today, I am sharing a bit different recipe than usual. The buckwheat flour crepes are a delicious and slightly nutty in taste, which will give you a totally new dimension of flavor. They are also gluten-free because they’re made only with buckwheat flour. That’s a such a healthy way to start the day.
Buckwheat flour crepes are perfect for sweet dessert and for savory wrap recipes. Enjoy them any way you prefer.

Ingredients
- 1 egg
- 1 ½ cup sparkling water
- A pinch of salt
- 10 heap Tbsp buckwheat flour
- ¼ tsp baking soda
- Vegetable oil for frying
Directions
- Whisk an egg in a mixing bowl. Add sparkling water and salt and whisk again.
- Add buckwheat flour and whisk until everything is combined.
- Now mix in the baking soda, and let everything sit for 10 minutes.
- Heat 22 cm frying pan over medium high heat. Grease with a little bit of oil (a few drops). Add ¼ cup of batter and spread on the frying pan.
- Cook for 2 minutes on one side, then flip to the other side and cook for 1 minute.
- Repeat the process with the rest of the batter.
- Serve warm or cold with any type of spread or topping you want. These are perfect for savory meals and for sweet desserts.
