If there was a form to sign that I would eat tomatoes every day, for the rest of my life, I would sign it, no second thoughts. That is how much I love tomatoes. And when you add fresh basil to it, then you get THE BEST combination of flavors in the whole world. Well, that is just my opinion, but I believe that lots of people would agree with me.
I just LOVE eating tomatoes, especially when they are freshly picked from my own garden. Even though they can be a little difficult to maintain, it is worth every step of the way.
Heirloom Tomatoes
For the past few years, my Mom and I try to collect as much of the heirloom tomatoes as we can. I think that, at this moment, we have at least ten or eleven different kinds of heirloom tomatoes. And they are all delicious in their own way because they all have something special in their taste and texture.
Some of my most favorite ones are Bull’s heart, Yellow pear cherry tomatoes, Black cherry tomatoes and Green Zebra tomatoes. When I make a tomato salad out of all of them, all of those bright colors make the salad even more delicious.

Bruschetta
Bruschetta is an Italian starter dish, that consists of grilled bread rubbed with garlic and topped with olive oil and salt. There are many variations when it comes to toppings, such as tomatoes, cheese, mushrooms, meat etc. It is usually served as an appetizer, but I love eating it as a snack or even lunch. I would just eat it for every meal. Haha!
In one of my recent posts, I gave you the recipe for No-knead Spelt Bread. If you haven’t read that post, you can do it by following this link. This bread is just perfect for making homemade bruschettas. All you have to do is grill the nice piece of bread on a dry grill pan, rub it with garlic (if you have an important meeting, just leave out the garlic), and top it with tomatoes and basil.
Trust me when I tell you that this meal is TO DIE FOR!
You can use any kind of grill pan. Personally, for grilling my bread I am using my Cast Iron Grill Pan because it is great to cook anything on high heat with little to no added fat. And the food always gets a smoky taste, as if it was barbecued. These pans also add those grill marks like in restaurants.
If you don’t have Cast Iron Grill Pan I would recommend you to buy it, because once it is seasoned, all you have to do is put it on the high heat, and start cooking.

Anchy
Yields 1 serving
Refreshing tomato and basil salad served on garlicky toasted bread! Perfect summer lunch or snack!

Ingredients
- 2 pieces of sourdough bread
- 1 clove of garlic (optional)
- Few fresh tomatoes
- Fresh basil leaves
- 1 tsp olive oil
- 1/2 tsp balsamic vinegar
- Salt and black pepper to taste
Directions
- Dice tomatoes and put into a bowl.
- Tear up some basil leaves and add to bowl.
- Season with salt and black pepper.
- Drizzle with balsamic vinegar and olive oil, and mix well.
- Let sit until you prepare bread.
- Heat up a grill pan over high heat. Don't add any oil.
- When the pan is heated, cut two pieces of bread and grill on a dry pan until grill marks are formed, 1-2 minutes on each side.
- Take out of the grill and rub one side, on both pieces, with a clove of garlic.
- Top garlic side with prepared tomatoes.
- Drizzle with extra balsamic vinegar and olive oil if desired and ENJOY!
